Kimchi Ramyun

The upgrade your instant noodles deserve. A handful of ripe kimchi turns a packet of ramyun into something with real depth. A Korean ramen pot boils fast and holds the heat, so you can cook and serve in the same pot, straight to the table.

Ingredients

  • 1 packet instant ramyun with its seasoning
  • 1/2 cup ripe kimchi, roughly chopped
  • 2 cups water
  • 1 egg
  • 1 spring onion, sliced
  • Slice of cheese, optional

Instructions

  1. Bring the water to a boil in your ramen pot.
  2. Add the kimchi and the seasoning packet and simmer for 2 minutes.
  3. Add the noodles and cook for 3 minutes, loosening them with chopsticks.
  4. Crack in the egg, scatter the spring onion on top, and add a slice of cheese if you like. Serve straight from the pot.

Tip: The riper and more sour the kimchi, the better the broth.
