Boricha (Barley Tea)

Nutty and Soothing. Boricha is Korea's everyday tea — a roasted barley infusion served hot in winter and cold in summer. Its toasty, slightly nutty flavor makes it a perfect palate cleanser and a gentle accompaniment to any Korean meal. Brewing it in a clay pot enhances the earthy depth of the barley.

Ingredients

  • 1/3 cup roasted barley (available at Korean grocery stores)
  • 8 cups water

Instructions

  1. Rinse the roasted barley briefly under cold water.
  2. Add barley and water to a clay pot or saucepan.
  3. Bring to a boil over medium-high heat.
  4. Reduce heat and simmer for 15–20 minutes until the water turns a deep amber color.
  5. Strain and serve hot, or let cool and refrigerate for iced boricha.

Tips

  • For a stronger flavor, dry-toast the barley in a pan for 2 minutes before brewing.
  • Can be stored in the refrigerator for up to 3 days.
