Ddukbaegi Bulgogi

Meaty and flavorful. Ddukbaegi Bulgogi is a Korean grilled beef dish, cooked in a traditional ddukbaegi pot. The ddukbaegi pot is made of clay or ceramic, and helps to retain heat and flavor. Bulgogi is marinated in a sweet and savory sauce, and is typically served with rice, vegetables, and kimchi.

Ingredients

  • 4 oz thinly sliced beef bulgogi
  • 1/4 cup bulgogi marinade
  • 1/2 cup Korean stock or water
  • 1/4 cup sliced mushrooms
  • 1/4 cup sliced green onions
  • 1 tablespoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 serving cooked rice

Instructions

  1. Marinate: Place the beef in a bowl and pour over the bulgogi marinade. Toss to coat and let marinate in the refrigerator for at least 30 minutes, or up to overnight.
  2. Prepare Ttukbaegi: Heat the Korean stone pot over medium-high heat.
  3. Cook Beef: Add the marinated beef to the hot pot and cook, stirring occasionally, until browned and cooked through.
  4. Add Broth and Vegetables: Pour the Korean stock (or water) into the pot. Add the mushrooms and green onions. Bring to a simmer.
  5. Season and Serve: Stir in the sesame oil and red pepper flakes (if using). Let simmer for a few minutes until the flavors meld. Serve over cooked rice.
